CRANBERRY ORANGE MUFFINS Courtsey Hastings House on Salt Spring Island Submitted by: Ann McColm 2 cups all purpose
flour In large bowl, combine flour, 2/3 cup sugar,
baking powder, salt and walnuts; mix well. Whisk together oil and eggs
until well blended. Make a well in centre of flour mixture and pour in
oil mixture along with oranges and cranberries. With large spatula,
gently fold dry ingredients into wet ingredients just until dry
ingredients are moistened. Spoon into 12 greased (2 1/2x1 inch) muffin
pans and sprinkle with remaining 2 tablespoons sugar. Bake at 350 degrees for 25 to 30 min. or until tops are firm to the touch. Makes 12 muffins.
